Kale as I have mentioned before is a hearty cruciferous vegetable that has valuable nutritional qualities. It gets a bad rap but combined with the right ingredients I have been able to get my daughter and my husband to try it and eat it.
Kale with Cherries 🍒 Romano cheese 🧀 White Balsamic Vinegar, Persian Lime Olive Oil |
RECIPE
Kale 3-4 cups. Leaves removed from stems Chopped leaves, rinsed well. Olive oil Persian lime 3 tbs, White balsamic vinegar 6 tablespoons, Cherries fresh or jarred 1/3-1/2 cup sliced in half, Romano cheese grated and shaved 3 tablespoons, Fresh 1/2 lemon zested and Juice of one lemon. Use the juice of one lemon to massage kale with sea salt 1 tsp.
Massage kale:
Acids from lemon juice and vinegar break down cellulose of the kale structure, making it more tender and more palatable. Chop kale leaves into 1/2 inch wide leaves and put into a large bowl and squeeze juice of one lemon on top of kale. sprinkle with coarse sea salt and massage leaves and as you massage them you will notice the leaves will start to wilt and soften. Once this begins the leaves are ready for preparation. Rinse kale and dry in the salad spinner. Zest and juice of half of a lemon and Combine kale cherries cheese and garnish with fresh cracked pepper and kosher salt to taste. Dress with the olive oil and vinegar flavors of choice, I prefer white balsamic and persian lime olive oil and a teaspoon of cherry juice from the jar.
